Technology helps standardize Shaxian cuisine
The cuisine of Shaxian county, East China's Fujian province, is spreading as locals travel afar and set up family-run outlets across the country. The cuisine has become well-known in China over the past few decades.
An industrialized and standardized central kitchen was set up in Shaxian county last year, which has a daily production capacity of 5 metric tons. It is expected to greatly improve production efficiency and lower labor costs.
